BLUEBERRY SYRUP

This wonderful syrup is useful in all sorts of dishes. Drizzle it on ice cream, pancakes, even muffins. Almost any dessert that calls for a topping can benefit from this.

2 cups blueberries, washed and patted dry

1 cup water

1½ cup sugar

1 tablespoon cornstarch

1 teaspoon lemon juice

1 teaspoon cinnamon

1½ teaspoon ginger

1. In a small saucepan, combine all of the ingredients. Turn heat on low and bring to a simmer. Simmer for 5 minutes.

2. Use a potato masher to mash the berries, then simmer for another 5 minutes.

3. Remove from heat. Cool before serving.

MAKES ABOUT 1 PINT
